NEW ORLEANS BROWNED BUTTER PECAN PIE Flaky Pie Dough Recipe (Makes Enough for 2 Crusts) 2¼ cups flour 1 tbsp. sugar 1 tsp. salt 12 tbsp. unsalted butter, cubed and chilled 6 tbsp. ice-cold water Whisk flour, sugar, and salt in a bowl. Using a dough blender, two forks, or your fingers, cut butter into flour mixture, forming pea-size crumbles. Add water; work dough until smooth but with visible flecks of butter. (Alternatively, pulse ingredients in a food processor.) Dont over-work. Divide dough in half and flatten into disks. Wrap disks in plastic wrap; chill 1 hour before using. Pecan Pie Filling (for One Pie) ½ recipe Flaky Pie Dough (above) 13 tbsp. unsalted butter 1 Tabl. Flour 2 cups pecans, toasted in a skillet in some butter ¾ cup light brown sugar 3 large eggs, plus 2 yolks ¾ light corn syrup ¼ cup Maple Syrup 1½ tsp. vanilla extract Large pinch kosher salt Splash of Jack Daniels or Kahlua if desired Heat oven to 375°. On a lightly floured surface, roll dough into a 12″ round. Fit into a 9″ pie plate. Trim edges and crimp; chill 30 minutes. Using a fork, prick the dough all over. Line dough with parchment paper and fill with pie weights or dried beans; bake 10 minutes. Remove paper and weights and cook 5 minutes more. Let cool. Melt butter in a 10″ skillet over medium heat; cook until butter is dark golden brown with brown flecks and it gives off a nutty aroma, 20-22 minutes. Remove from heat. Stir in flour. Let cool. Toast pecans lightly in a separate skillet with a little butter. Set aside. Whisk brown sugar and eggs in a medium mixing bowl until pale and fluffy. Stir in browned butter, plus corn syrup, maple syrup, vanilla, and salt until smooth. Taste before adding anything else. Fold in nuts and pour filling into pie crust. Place a foil “ring” around the exposed crust to prevent overcooking. Bake until just set in the center, about 45 minutes. If pecans start to look too dark, place a tent foil over pie. Transfer pie to a rack and let cool completely before serving.
