Need a Mothers Day dinner idea? Shrimp Tortellini Pasta Toss 1 pkg 9oz refrigerated cheese tortellini 1 cup fresh asparagus, chopped 1 lb uncooked medium shrimp, peeled and deveined 3 tbsp olive oil, divided 2 garlic cloves, minced ¼ tsp salt ¼ tsp dried thyme ¼ tsp pepper Cook tortellini according to the package directions, adding the asparagus the last 5 minutes of cooking. In a large nonstick skillet, sauté shrimp in 2 tbsp oil for 2 minutes. Add garlic and cook 1-2 minutes longer or until shrimp turns pink. Drain tortellini mixture than add to skillet. Stir in the salt, thyme, pepper and remaining oil.
