Need hive mind help. I put a 5 gallon batch of wild persimmon mead up to ferment in November. It was a fantastic tasting concoction before I pitched the yeast. Fermentation ended a while ago and the solids pretty much settled out (a few floated). I checked gravity and taste yesterday. Gravity showed an AbV of 8%. Aroma was lightly floral (rather nice I thought). The flavor was just weird though and did not go with the aroma at all. I do not have enough experience to describe it. Not as harsh as antifreeze. Not sweet at all. A little fizzy it seemed. Almost like fruit gone bad, but not really. It needs corrective action, but I do not know how to determine what corrections are needed (or what corrections are available!).
