Need to get rid of that extra turkey? Whip up a stir fry that is healthy and easy to make! Stir Fry Turkey with Broccoli Ingredients 1 1/2 lbs. skinless turkey/chicken breasts 1 tsp. oil 2 tbsp. minced fresh gingerroot 1 onion sliced 6 cups broccoli florets 1/2 cup thinly sliced carrots 3 cups sliced mushrooms 1/2 cup low sodium chicken broth 2 tbsp dry Sherry 2 tsp. light soy sauce 1/2 tsp. flour 2 tbsp. water 4 cups sliced Chinese cabbage or bok choy 1 oz. chopped roasted almonds Instructions Cut turkey into thin strips; set aside. In Wok or large heavy skillet, heat oil over high heat. Gradually add chicken to wok with half of the gingerroot; stir-fry for 2 minutes, adding a little water to prevent sticking if necessary. Set aside. Mix together chicken stock, sherry, and soy sauce; pour over broccoli, carrots, onion and mushrroms. Cover, and let steam for 2 minutes. Stir in chicken. Mix flour with water; stir into wok and bring to boil. Add Chinese cabbage; stir and cook for 1 minute or until tender-crisp. Sprinkle with almonds before serving(if using).
