New regulations have been set on the use of the “gluten free” label. The guidelines state that a product cannot contain more than 20 parts per million of gluten. Those with celiac disease who have to avoid gluten can become very sick if they consume gluten. The new labeling limits will help ease doubts as there were no restrictions before. The only limitation is that that use of the gluten-free label is voluntary. That means some consumers still should read ingredient lists carefully especially if very sensitive to gluten.
