New to the group. Following the ketogenic diet. Heres tonights experiments. Cheesy Pork Rind Meatloaf. 3 lb 73/27 ground beef 2 large eggs 1 cup organic panko breadcrumbs 4 beef hotdogs 6 slices of thick cut smoked bacon 3 oz Colby Jack Cheese ½ a bag of hot & spicy pork rinds smashed into dust Couple tablespoons each of ketchup and mustard A few dashes of black pepper Ran all but the cheese thru my new grinder to mix and break up the 3lb chub of meat. Half went down in a pot roast pan. Formed it up so nothing touched the sides. Placed the 3 1oz slabs of cheese on the base. Finished making the loaf with the other half of the mixture. Take care to cover the cheese to keep it contained. 350 deg in the oven for 1hr 20 min then give it about 20 min to cool and set. Pour off all the drippings. Tender and tasty. Pork Rinds added salt but the finished product is not salty at all. Makes 8 healthy servings. Per serving: 739 cal, 59g fat, 211mg cholesterol, 690mg sodium, 8.6g carb, 40.9g protein.
