Nice article. Read it please. He says it better than I have said it all in one place. Yes, I have been talking about this for years now. Chefs - like consumers - want what they want when they want it - without regard to factors beyond their own immediate need. That makes it really tough on guys like me. And so easy to call the Sysco rep for all their food needs. This is one very important step, and one I have designed into one group of my members, but there is resistance there. The next step is to choose your farms based on whether you believe that the farms represent the future and values, or, is it someones hobby (fine but not making the future better), or just making products and not really innovating, but because they arent, or the farm is long since paid for and they choose to give away their farm dollar by dollar through the products they sell cheaper. More sophistication is necessary to accelerate the pace of change - and the pace does need to accelerate. But making choices on such far thinking and cerebral a basis is so very very hard to sell much less be the sophisticated to figure that out. Youll be seeing articles on this in about 10 years Id estimate. I was talking about THIS 10 years ago....well so was Joel Salatin anyway... Support the whole farm. (buy the eggs too folks!) Support farms that represent the future, not just what you want for the cheap price right now. Get in there and help Educate yourselves and become a resource to friends & family & coworkers (not a conspiracy nut please) and the hardest yet... Create a less complicated life for yourself so you can give adequate time to all of the above....it will feel so good---
