No bake Chocolate Mars Bar Cheesecake! 1 1/2 cups Oreos crumbs or 1 1/2 cups graham cracker crumbs 1/3 cup packed brown sugar 1/2 teaspoon ground cinnamon 1/3 cup butter, melted (1/4 if using Oreos) 16 oz cream cheese BLOCKS 2 teaspoons lemon juice 2 cups heavy 35% cream 1/3 cup white sugar 2 Mars bars cut into small pieces 1 cup Nutella or 1 cup semi-sweet chocolate chips 1. In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. If using Oreos crumbs like I did in the pictures shown, DO NOT put the brown sugar and cinnamon. (Ive tried this recipe with the Oreo crumbs and the graham cracker crumbs and they are both delicious and work really well!) 2. Add melted butter and mix well. 3. Press into the bottom (not the sides, only the bottom) of a 9 inch cheesecake pan, or a spring-form pan (I used a 9 inch spring form pan). Set aside in the fridge to cool until firm. 4. In a large bowl, beat together with an electric mixer the cream cheese blocks and the lemon juice until soft. 5. Add the 35% cream and continue to beat the mixture until it becomes thick. 6. Add the sugar slowly and beat until the mixture is very thick and stiff. 7. Divide the cream mixture into two equal portions, in two separate bowls. 8. In one bowl add the chopped Mars bars and mix until combined. 9. Once combined, place that mixture over the chilled Oreo or graham cracker crust and smooth it out with a spatula. Set aside in the fridge so it can become firm as you make the final layer. 10. In the remaining cream mixture, you can add the one cup of Nutella OR melt the chocolate chips and then combine with the cream mixture and mix until fully combined. (Ive tried it both with nutella and with the melted chocolate and I cant decide which one is better). 11. Once the Mars bars layer of the cheesecake has slightly settled, spread the Nutella or chocolate cream mixture over it and smooth it out with a spatula. 12. Chill the cake for several hours (at least 4-6, ideally overnight), until its firm. (I let mine set overnight and it turned out great). Enjoy! :) P.S. Sorry one of the pictures is blurry now that I look closely at it on my computer. And your top layer might have a darker shade compared to the cheesecake I have in the pictures because I only had 3/4 cup semi-sweet chocolate left lol. Also, I said to use cream cheese blocks because they settled A LOT better than the spread. And do not use low fat or light cream cream because it needs to be able to stick together with the 35% cream.
