Nom nom!!! We got some roasted roots! Sweet potato, beets and red onion tossed in melted down coconut oil and Himalayan salt. Cooked at 425 until roasted ☺️😍😜 Then we have blueberry/red onion asparagus. Due to most oils and all vinegars being taken away I had to improvise my original recipe that contained EVOO, red wine vinegar and mushrooms (cant have those either) Sooo...this is red onion cooked in coconut oil, add in a quart of blueberries and about 1/4 chicken broth to give it a base. Cook over low-medium until all blueberries have broken down. Steam up 2 bushels of asparagus. Toss blueberry/onion over chopped asparagus and season ground black pepper and Himalayan salt. Then CHOW DOWN!!!! the protein is coming.....still in the oven lol
