Not because of the latest oil scandal, I am not too fascinated by the food/snack stalls in Taiwan that most people do. I lost my appetite when seeing a big wok of hot oil ! However, I must say Taiwanese are very creative in making different kinds of deep-fried snacks. During the few days in Kenting/Kaohsiung, I saw many stalls selling deep-fried mushroom, especially King Oyster Mushroom (直菇/杏鮑菇). I modified to the below version WITHOUT using any oil. Deepfried King Oyster Mushroom ========================== King Oyster Mushroom few Egg (beaten) 1 Fresh thyme & basil (finely chopped) & some breadcrumb & salt/pepper for seasoning 1. Brush the stem of the mushrooms with beaten egg. 2. Coat the stem part with mixed herbs. 3. Airfry at 180 degree for around 10 min (depends on mushroom quantity and size) Done !!!!!
