Not grilled cheese sandwiches - grilled cheese! Living in a Brazilian neighborhood means theres a lot of interesting ethnic food available in the area; I went to a local meat market and picked up some linguica sausage today. I also came across a block of Grilling Cheese - quiejo de coalho. It was such a simple idea, I was intrigued. All youre supposed to do is cut this cheese into small blocks, stick them onto skewers, and grill it; and thats it. The ingredients label was nothing more than milk (cheese) and soy. The soy was presumably mixed in to hold the cheese together, and keep it from melting. So, I gave it a try - and not only did it take no time it all to cook, it was very simple and tasty. I heated a cast iron skillet up to just under medium; since this was cheese, I didnt want to burn it. When the pan was hot, I melted a bit of lard, let it get hot so it was barely smoking, and added the cheese. The outside developed a nice brown crust very quickly: I fried it for no more than a minute for the top; flipped it over and fried it for another minute; then fried the sides for about thirty seconds each. I pushed the blocks around in the pan as they fried, without lifting them, to keep the cheese from sticking and burning. It only took about three minutes to fry these. After plating, I let them cool for a couple of minutes, to let the cheese harden. Fast, easy, and delicious!
