WHEN PREPARING TURKEY, I drape bacon across the top (maybe 5-6 strips, if you like more go nuts), and put a bit of water with some big chunks of veggies in it (celery/turnip/onion), that release moisture upwards, while the cooking bacon helps insulate the top from the heat of the element. Seems pretty successful. but always hard to know if its your method of cooking, or a particularly juicy bird to begin with?? :-)
