Note to self: Batch 1 - Never boil continuously at high heat. Fortunately I learned after washing the floor the first time and using a razor blade to remove the splatter on the stove. Batch 3: NEVER again use ONLY bottled lemon juice in jam recipe - 1T max. Note 2 - have a back up supply of organic sugar when making jam. Batch 3 - an array of sweeteners beyond regular sugar - a little agave, brown sugar and coconut sugar. Not sure that will even compensate for the way too tart taste. Did I over react? the proof will be in the jar.
