Now the days are getting colder Ive been missing my porridge in the morning so I came up with this warming sweet potato porridge recipe thats too good not to share! For two bowls youll need: 500g grated sweet potato 600ml almond milk 1 tsp of cinnamon 1/4 tsp of nutmeg 2 scoops of vanilla protein powder (I use sun warrior blend) Place the sweet potato in a pan with half the almond milk, plus the spices. Warm gently to simmering point and allow to simmer for 5-10 minutes with the lid on, stirring occasionally, until the sweet potato is soft but not puréed. Mix the remaining milk with the protein powder in a shaker bottle, shake well then stir into the sweet potato mixture Heat through and allow to thicken slightly Then serve warm topped with nuts, seeds and fruit of your choice Perfect as a starchy hit post workout!
