Now you don’t think I’d tell you to eat some kale without giving you an awesome way to do so, right? After baking some sweet potatoes in the oven, I stuffed them with a delicious tahini rosemary maple kale salad. Sounds complicated but it only takes five minutes to make- oh and tastes amaze-kale! The dressing for the salad is 1/4 cup tahini, 1 lemon (juiced), 2 tablespoons ACV (or more lemon juice), 2 tablespoons maple syrup, 5-6 tablespoons water, 1 clove garlic, red chili flakes (to taste), and enough fresh rosemary to make you happy (I put in quite a bit of fresh leaves). Chop your kale finely and add a few leaves of fresh mint. Coat your salad with the dressing and massage until soft. Add garbanzos and onions or whichever other veggies please you.
