Nutella mousse 140g vanilla sugar 3 whole eggs plus 3 extra egg yolks. 1tbsp Cocoa powder 85gm butter 1jar Nutella 200ml double cream Turn on the heat and in a pan put in 55gms of the vanilla sugar, all of the 6 egg yolks, cocoa powder and cream and bring to simmering point, whisking all the time so that it will thicken to coat the back of a spoon. Remove from heat and add the jar of Nutella until it all melts. Make a meringue with three egg yolks and add the remaining sugar slowly until the meringue is stiff and holds its shape. Fold the meringue slowly into the chocolate mixture until it is all combined. Pour into separate cups or into a large bowl. Refrigerate to set. When set decorate with whipped cream, strawberries and grated white chocolate, any way you wish.
