Put them together and wow! *Also known to lower blood pressure *Beware - the dark carotenes may give your urine and bowel movements a deep red tint CHOCOLATE AND BALSAMIC ROASTED BEETS Ingredients: 1 lb beets 2 Tb olive oil ½ c Balsamic Vinegar ¼ c sugar ¼ c cocoa powder ½ ts vanilla ¼ ts salt Spinach or beet greens Directions: Preheat oven to 400. Trim, peel, and cut beets into wedges. Place in baking dish and add olive oil. Cover and bake about 45 minutes. Mix remaining ingredients in sauce pan. Warm and thicken slightly.
