OKRA SOUP 2 lb. beef chuck, diced 1/4 lb. butter 2 (16 oz.) can tomatoes 1 1/2 fresh or frozen okra 2 c. butter beans, cooked 1 lb. cured ham, cooked and diced Salt and pepper 1 (16 oz.) can whole kernel corn or cut off corn from two fresh ears In deep kettle, brown beef chuck in butter. Add tomatoes, okra, and corn. Cover with boiling water and simmer covered on medium heat for 1 hour. Then add 4 cups boiling water. Bring to boil and simmer, stirring frequently. Skim soup as it boils. Cook until okra is done. Add beans and ham. Salt and pepper to taste. Cook about 5 minutes more. Ready to eat. Cornbread is good with this.
