OMELETTE COOKED INSIDE A PARATHA Years back travelling some place by car, we ate at a dhaba and the cook there suggested we try out his egg parathas.When we got the parathas we were surprised as we could not see the egg anywhere. When we took the first bite ,to our surprise there was a thick omelette inside the huge paratha. We enjoyed the parathas and before leaving I asked the dhabawalla to show me how he made the parathas. Regular wheat dough with salt and ghee or oil. Beat eggs with a little milk and add salt, pepper and very finely chopped onion, green chili and coriander leaves. Mix all together and keep in a mug with a pout. You can add tomatoes and capsicum or mushrooms also but very finely chopped. Roll a big and a slightly thick paratha in a triangular shape with ghee and wheat flour sprinkled in between. Put on the tava and flip over when done on one side. When it fluffs up ,quickly make a small hole in one corner of the parathas from where it has fluffed up and lower the gas. Now carefully pour the egg mixture from a mug with a pout through the hole and tilt a little on all sides so that the mixture spreads evenly.Do not let it overflow. Keep the open hole closed with a chimta till the egg inside gets cooked and does not come out. Set the gas to high again and put ghee and fry the paratha till crisp on both sides. Since it’s a big paratha you can cut into 2 pieces and serve hot.
