OMG...The salsa verde is simmering and I tasted it a bit ago to see if needed anything else...you know...more jalapenos ?? More cumin ? Salt ?? IT IS PERFECT...a bit of a bite (no more jalapenos!!) tastes wonderful !! This may be my new favorite !!!! Well see how it is after canning. In the meantime , the house smells all cilantro-y and spicy...yum ! I have the mixture cooking for tonights stuffed peppers too, once I get that cooked I can put the canner on the stove and get the process started while the peppers are in the oven. The pints only have to boil 20 minutes or so. Its cleaning up the mess and having all the jars washed and boiling and bringing those BIG pots of water to a boil that take all the time. Well...assembling ingredients too, I guess. This has been an all day job, lol...wouldve been done sooner if I hadnt taken some time off to go see my buddy Phil George Philski... but made good use of the time and stopped for lime juice and garlic and then stopped by the pumpkin mans house on the way home...and then stopped by Woodburn Country Store and picked up my small fortune worth of honey (2 half gallons). Finally got home and got back on track though. Going to make this a simple supper tonight--stuffed peppers on top of basmati rice with a tomato sauce. A side of Brussells Sprouts for me, steamed with butter and cracked black pepper and buttered carrots for himself, which are canned (by me) and all I have to do is heat and eat. We got our next 2 Nurse Jackie (Season 2) discs today...you know what were doing tonight... lol
