ORZO AND MEATBALLS 1 ½ CUPS FROZEN VEGETABLES (YOUR CHOICE) THAWED AND DRAINED 2 TBL ITALIAN DRESSING 1 ¾ CUPS BEEF BROTH 1 CUP UNCOOKED ORZO 16 FROZEN COOKED MEATBALLS (FROM A 16 OZ BAG, I LIKE MAMA CELESTE BRAND) 1 LG TOMATO CHOPPED (1 CUP) 1 TBL DRIED PARSLEY ¼ CUP PARMESAN CHEESE (SHREDDED) IN A 12” NONSTICK SKILLET STIR FRY THE VEGETABLES IN THE ITALIAN DRESSING OVER MEDIUM HIGH HEAT FOR 2-3 MINUTES. STIR IN THE BROTH AND HEAT TO A BOIL. STIR IN THE PASTA AND MEATBALLS. BRING TO THE BOIL AGAIN, REDUCE HEAT TO LOW, COVER AND COOK 10-12 MINUTES STIRRING OCCASIONALLY. STIR IN THE TOMATO, COVER AND COOK 3-5 MINUTES UNTIL MOST OF THE LIQUID HAS BEEN ABSORBED. STIR IN PARSLEY AND SPRINKLE WITH PARMESAN. SERVES 4
