Oh yeah, I just ate these for dessert! Recipe of the day: Pumpkin carrot cake muffins- Ingredients- 4 egg whites 1/2 cup Stevia 1/4 cup Greek Yogurt 3 tablespoons butter, softened 1 teaspoon vanilla 1/2 cup pumpkin 1 cup almond flour 1 cup coconut flour 2 teaspoons baking powder 1 Tablespoon cinnamon 1 teaspoon ginger 1/2 teaspoon nutmeg Dash of salt 1 cup carrots -- shredded Directions- Preheat oven to 350F. Grease muffin pan. In large bowl, add egg whites and beat with a hand mixer untill fluffy. In a separate bowl, combine stevia, Greek Yogurt, butter, vanilla and mix well. Add almond flour, coconut flour baking powder, cinnamon, ginger, nutmeg, and salt. Beat on low speed until well combined. Add carrots and pumpkin and continue mixing until well blended. Last, gently fold the egg whites into the mixture. Pour into pan. Bake about 40 minutes or until toothpick comes out clean. Let Cool.
