You requested healthy, kid-friendly meals and an insight to how I keep my kiddos healthy through the Holidays. We made a quick video for you all. Dont mind the quality of the work or the bum shot. My 5 year old isnt that great of a camera guy and the hubs isnt here. #makeitwork #reallife >>>How dinner came together... I laid out the veggies on the cutting board and asked the kids to choose. They chose Brussel sprouts, carrots and zucchini....with chicken nuggets. NO PROB. Healthy Chicken Nuggets Cube 2-3 boneless, skinless chicken breast. Add to a container filled with whole wheat bread crumbs, 1 tsp Italian seasonings, s&p, garlic powder. Put the lid on and Shake until coated. Bake for 15-20 min at 425 turning once 1/2 way. Carrot Fries Toss baby carrots with spices of your choice and 1 teaspoon melted coconut oil. Bake for 20 min at 425. Zucchini and Brussels sprouts were cut into cubes and added to a sauté pan medium heat with 1 teaspoon coconut oil, 1 teaspoon garlic and S&P. Sauté until golden brown stirring frequently. BOOM. Done. SO EASY!
