Ok, I am a southern girl from a small town and where I grew up when the tomatoes were ripe we made tomato sandwiches. And although I have ventured to other places, my simple, southern roots are ever with me. The tomatoes in my garden are beginning to ripen and guess what I will be having for lunch today? You guessed it, a tomato sandwich. I do my own healthy version of this southern classic with toasted whole grain bread, avocado, alfalfa sprouts and a special jalapeno & sun-dried tomato mayonnaise ( Dukes mayonnaise only), topped with a little sea salt and fresh ground pepper. Lunch time cannot get here soon enough. Ok, ok, I am focused again. LOL! How good is that......
