Ok Kenzie Bernier here is my Paleo Pumkin Muffin recipe from ScottsDale CrossFit. I have revised it so that it is WLC compliant for all levels. Brandon says they are better this way! Dry ingredients: 1 1/2 cup of almond flour(ground almonds) 1/2 cup organic coconut flour 1tsp baking powder 1tsp baking soda 4tsp cinnamon Wet ingredients: 1 cup of canned pumpkin(look for 100% per pumpkin or make your own) 1/2 grated apple 1 mashed banana 3 eggs 2 tbsp almond butter Optional(I always add these) 1 cup of raisins 1/2 shredded unsweetened coconut 1/2 chopped nuts Preheat oven to 375. Mix dry ingredients and wet ingredients separately. Add dry to wet, mix well. Add optional ingredients, mix well. Let mixture sit for at least 10 min to allow the coconut flour to absorb the moisture of wet ingredients, this prevents dry muffins ;) Spoon into lined cup cake tin, I always use parchment baking cups, they are non-stick. Cook for 20-25 min. Enjoy!!!
