Ok, bread baking kitchen sisters, Lisa Cantrell and Crystal Cipriani-Hoch. I have been doing my rising all wrong! I could never do the kind of handling she is doing around minute 8:00 with my breads. They would deflate. And I score them BEFORE the final moments of the rise. But here is the thing I prefer the texture of the crumb when I do it my way. It is FEATHER light, because it is really proofed and geeeeeently placed in the oven. I want to get a couple banneton baskets for those gorgeous lines. And for the lame, I just use a straight razor. Ive never made a boule shaped bread so this is ON the list! Might start FINALLY doing my sourdough starter today.
