Ok folks, I try not to post recipes, but this one is too good not to share. It may only appeal to the over-50 crowd (my parents, Tim and I love it, but my supposedly grown-up children turn up their noses at it). My Daddy found this Paula Deen recipe for Tomato Pie on the internet - Ive tweaked it just a little bit to suit me. We love it as a main dish or a side dish. 4 tomatoes, peeled and sliced (5 or 6 if theyre small) 10 fresh basil leaves, chopped (more if theyre small) 1/2 cup chopped green onion (I liked chopped Vidalia onion instead) 1 9-inch deep-dish pie shell (pre-bake according to pkg. directions) 1 cup grated cheddar cheese (I use sharp) 1 cup grated mozzarella cheese (I use Italian cheese blend) 1 cup mayonnaise Chopped garlic to taste (I use about 1 1/2 tsp.) Salt and pepper After baking the pie shell, lower oven temp. to 350. Place tomatoes in a colander in the sink, sprinkle with salt, and let drain for 10 min. Layer tomatoes, basil, and onion in pie shell. Season with pepper to taste. Combine grated cheeses, garlic, and mayo in a bowl. Spread mixture on top of the tomatoes and bake for 30 min. or until lightly browned. Cut into slices and serve warm.
