Ok guys I have a confession. Last week, I offered to bring the BIG Turkey for our Friends Thanksgiving Potluck. I was super nervous; I felt like the pressure was on since I am the good cook amongst my friends. What happened if I undercooked the bird or, worst yet, cooked it too long and it was super dry?! Well much to my dismay, the turkey came out so flavorful and juicy that we were having withdrawals wishing there were more leftovers. When I went food shopping earlier, my little local market was selling fresh leftover natural turkeys for 1/2 off. I couldnt pass it up that deal so I bought one and I am baking another turkey for our family, yup for no apparent reason or special occasion. Just because. I figure this is the epitome of meal prep. Hopefully this turkey will last us a few days and I can get a break from cooking. Plus I can make more bonebroth! Anyway, I wanted to show you in this little video and let you in on my secret to a moist turkey or chicken. The trick is seasoning the bird underneath the skin with this mouth watering garlic mojo, which is a Cuban inspired citrus garlic sauce that I make homemade like every mother teaches their daughters growing up. Best part is you get a workout making it. If this is not CrossFit, I dont know what is. Just pound 45 garlic cloves with kosher salt, add some peppercorns, oregano, olive oil and white vinegar and the rest is history.
