Ok, here comes the recipe. I personally think that my almond flour birthday cake (you can see the recipe by clicking on the cake photos) is much better than coconut flour version. Although it looks great and tastes fine, there is something not right when it is combined with whipped cream. It was a bit dry, and it sort of repelled the cream. But what was surprising for me is that some of our young guests thought it was very good and kept asking for more. According to their parents they are quite picky when it comes to the food and they did have the option of high carb cakes ( which I always serve when we have guests ). Birthday boy thought it was very good and had almost half of the total cake, but it is little easer to impress him, since the low carb diet for last 4 years has changed his taste buds. So decided to post the recipe - 6 eggs, 1/2 cup coconut flour, 1/2 cup sukrin stevia mix, 10 drops of vanilla stevia. Mix all the ingredients in food processor and bake it for 20 min at 170 C. I have baked 3 layers, so used 18 eggs in total. Used 1 liter of whipped cream and 100 gr. of low carb chocolate melted on the low heat and a little bit of milk for the consistency.
