Ok here it is! This is the cake made for me by someone who cannot cook! They did a fantastic job! Chocolate mudcake with chocolate ganache icing For dairy free replace the butter with either coconut oil or light olive oil, or a mix of both. For the icing you can use coconut cream in place of normal cream. Check your chocolate is dairy free. Gluten free -replace spelt flour for gluten free flour. Ingredients 200g butter 100g dark chocolate, chopped ¼ cup of water ¼ cup of cacao powder 1 tsp vanilla extract ½ cup of a granulated sugar such as coconut sugar, rapadura or caster sugar 3 eggs, room temperature ¾ of a cup of spelt flour 1 tsp baking powder Method Preheat oven to 160c Grease a 22cm round cake tin or line with baking paper. I used a bundt cake silicone one. Combine butter, chocolate, water, cacao and vanilla extract in a medium pot, Cook whisking constantly, over a low heat until smooth and well combined. Remove from heat and stand for 10 minutes or until lukewarm. While that is cooling use electric beaters to whisk the sugar and eggs until thick and creamy. Whisk in the chocolate mixture until well combined. Add the flour and whisk until combined. Pour the mixture into your prepared cake tin. Bake for 50-55 minutes or until a skewer comes out clean. Don’t worry if it cracks. Remove from oven and let it sit for 15 minutes before turning onto a cake rack. Ice when cold. Icing Melt 150g dark chocolate and ¾ cup of pure cream together. Remove from heat and leave to cool until it is a spreadable consistency.
