Ok so today i am making a lamb and pumpkin curry in my slow cooker! Seems like one of the easiest recipes ever except i have to chop up the pumpkin - i bought a whole one so i can dry seeds for planting and grow my own :) Here is the recipe - i am not using dates as i can imagine the reaction lol and i used lamb chump chops not shanks. I also used an entire tin of coconut milk and less water. I will have this with caulirice and basmati for the others. Will post a pic and let you know how it turns out. 4 Lamb Shanks 500g Pumpkin (1 lbs)1/2 cup chopped Dates (optional) 1 diced Onion 4 cloves diced Garlic 270g of Coconut Cream (I used coconut milk) 4-6 cups of Water (depending on how thick/thin you want your curry) 3 Bay leaves 1 Tbsp Ground Ginger 1 Tsp Black Pepper 1 Tbsp Paprika 1 Tbsp Cumin 1 Tbsp Turmeric 1 Tsp Crushed Chilli 1 Tsp Cinnamon Salt to taste Instructions Place the Onion, Garlic, Bay leaves, Spices, Coconut Milk, Water and Lamb Shanks into the slow cooker.Allow to cook on low heat for 2 hours.Add the pumpkin and dates and cook for another 6 hours on low heat or until the curry is thoroughly cooked.
