Okay, 1st Christmas Eve of my life all by my all by myself onesies. I was _supposed_ to have a friend over tonight, but she (and me) were feeling under-energized. Alas, energized enough to cook and this was my dinner ~ just using up food I had in the house. One of those packaged bacon-wrapped filet mignons (they are good!), a baked potato, roasted delicata squash/ beets / garlic / Romaine lettuce (yes lettuce - why not?) veggies And I had a few mushrooms so a beef marsala wine mushroom sauce. AND the best of them all ~ roasted and salted seeds from the squash! Coffee ice cream with pecans for dessert. YUM!
