Okay, friends and fellow New Orleanians--I need some help on a, um, well call it a discussion, Im still...a year later...having with Mother. Shes from Mississippi, married a NOLA man, and raised us in the city until I was 15, when we moved. She made red beans and rice last year for my birthday. With just two of us here, meals tend to be small and simple, so, a large pot of beans was a treat. I walked in as she was pouring a HUGE can of chopped tomatoes into the pot. I was stunned, and asked her why. She replied, This is how you make them. No. Youve never done that before, I dont do it, Daddy didnt nor The MaMaws nor Aunt Aloisia nor my brothers. Rather than say shed heard about it and wanted to try something new--after 55 years--or shed made a mistake, she was furious I questioned her, and continues to insist it was how you make New Orleans red beans. 😧 Needless to say, she tried them and threw them out. The discussion lingers--she insists its always been that way, I say no. Do any of you use chopped tomatoes?
