Okay, here we go! The first recipe is a Snack Attack version of a classic! CAPRESE WRAPS Ingredients: 1 Whole grain tortilla wrap 2 campari tomatoes or 1 plum tomato 2 slices mozzarella 8-10 small fresh basil leaves Olive oil, white balsamic vinegar, salt and pepper to taste Preparation: 1) Using a butter knife, slice tomato(es) into 8-10 slices. 2) Season tomatoes with salt and pepper. 3) Cut Mozzarella slices into pieces roughly the same size as the tomatoes. 4) Wrap the tortilla in 2 damp paper towels and microwave for 12 seconds. 5) Unwrap tortilla from paper towels and place tortilla on a microwave safe plate. 6) On the center of the tortilla, layer a tomato slice, 1-2 cheese slices, then a basil leaf in that order, repeating until all the ingredients are used up. (picture 2) 7) Holding your thumb over the top of the bottle of olive oil, leave just enough of an opening for a few drops of the oil to drizzle out when tipped. (You might want to practice over the sink first!) Drizzle a small amount of olive oil over tomatoes. (picture 3) 8) Wash your hands. 9) Holding the bottle of vinegar the same way, drizzle a little bit of balsamic vinegar over the tomatoes. (Practice this one over the sink first, too. Vinegar and oil pour very differently!) 10) Wash your hands. 11) Fold the sides of the tortilla in, covering each end of the line of tomatoes, then roll the tortilla starting with the side closest to you to form the wrap. 12) If desired, cut the wrap in half on a diagonal. 13) Enjoy!
