Okay my veggie burgers are also a hit n since me n my dude are getting a food truck they will definitely be on the menu. But for all yall curios ones here goes the recipe: 1 head of cabbage 1 bundle of spinach 1 can of carrots 1 can of peas 1 head of cauliflower 1 cucumber 1/2 cup red onion 1 can of hearts of Palm 1/2 cup red bellpepper 1/2 cup green onion 1/2 cup of carrots 1 & 1/2-2 cups Flour 1 lemon 2 Eggs-u can substitute with Italian dressing if u prefer 2 tblspns Garlic pepper 1 tspn Salt 1dash reg blk pepper Finely shred cabbage except heart and white part-about 2/3 of the cabbage and also finely shred about 2 cups fresh spinach-steam in steamer (I used a colander on top of a pot n put a top over it) steam for about 15-20 minutes or until cooked to your desired consistency/ u dont want it soggy-next cut cauliflower into chunks and steam also Mash canned peas n carrots in a large bowl- steam also Dice red onion, green onion, red bellpepper, hearts of Palm, carrots, n cucumber-also cauliflower after steaming so it will be small enough Mix all veggies in a bowl. Cut lemon in half n squeeze all juice into mixture. Add garlic pepper n salt. Stir in two eggs. Gradually add flour until mixture turns pasty. (Real vegetarians do not use egg. Substitute with Italian dressing) Add two tblspns olive oil and scoop out a glob of veggie mixture and press into pattie. Place in hot oil and cook until the patties are stif like a burger. If you take it out too soon it will fall apart. Mmmmmmm...this is healthy n taste bomb!!! Hint: use any vegetables you like as long as the base is smashed carrots n peas or something similar. Taste even better with cheese, though thats a lot more fattening. Tomorrow Ill mix mayo n mustard with pepper n add the sauce on my veggie burger with cheese cuz I aint on no damn diet!
