Old Fashioned Arkansas Apple Butter Wash, quarter and core apples. Fill LARGE kettle with the apples, and add 2 cups water. Simmer til apples are soft. (Can also cook the apples in a large crock pot.) Pulp the apples in a food mill or processor. Add sugar, cinnamon & cloves to pulp. To make the butter, old recipe calls for 4 cups sugar, 2 tsps of cinnamon and 1/4 tsp of ground cloves for every 4 pounds of apples. (Rule of thumb is: 16 medium apples will yield 4 pounds.) **** I use half that amount of sugar, and its still VERY sweet. Cook the apple butter slow simmer, stirring to keep from sticking on bottom. Cook til it rounds up on a spoon. Hot water can pints with 1/4 head space. Process 10 minutes. ***** If the apple butter seems too thick, add a little hot water to it while cooking or a little apple juice.
