Old Fashioned Potato Soup 5 pound potatoes, peeled, boiled until done then drain most of the water off. I mash up part of them and leave part of them in larger chunks. 1 pound bacon, fried and crumbled, save grease 1 carrot, shredded 1/2 red onion very finely chopped 1 cup chopped green onions, or as many as you like 1 stick sweet cream butter (I use butter, not margarine) 1 carton heavy whipping cream 1 cup chopped ham, or as much as you like 1 8oz package shredded cheddar cheese or more if you like it really cheesy After frying your bacon, crumble it and set it aside. Saute the shredded carrot, red onion, green onions and ham in the bacon grease. After most of the grease is gone, add the stick of butter and saute that for a few minutes. Add the whipping cream and let it simmer for a few minutes to thicken up a bit. Once that is all nice and creamy, remove it from the heat and pour it all in the pan of potatoes. Add as much milk as you like to make it the thickness you like. Bring it to a boil, then stir in the package of cheese. Simmer it until all the cheese is melted then dump in your crumbled bacon. Stir it all up and there ya have it. This is a combination of different recipes that I tweaked to make my own recipe. Its similar to what my great grandmother made. Cindi Garrison
