Old school Colombian fresh cheese making, I assume from the coast (costeno). Its not so controlled! They are outside at a picnic. Flies are landing on the cheese as it curdles and the guy shoos them off. He wears gloves, but when he massages the curds, he sticks his hairy arms down into the pot really deep! Then, to drain the curds, he doesnt use a colander, but rather takes a shopping bag, puts the cheese in, hangs it from a tree, and then stabs it with a fork!!! Nonetheless, the 8 min. video shows the basics of how a basic, ancient-style fresh cheese is made.
