There are over 30 million olive trees in Crete producing more oil than all the other Greek islands and the mainland of Greece together. Cretan farmers essentially grow along with their trees as traditional land is inherited from generation to generation. The main reason that the Cretan farmers still cultivate their trees using traditional methods, is the deep love for their land and their deep respect for their trees. The olive harvest starts in the fall. In some areas lasts until the beginning of the new year. It is a whole ritual, practically a celebration! Olive oil is a living product that needs special attention so that its quality and taste is optimal. It takes great care at every stage of the olives life, from the olive grove to the final consumer, to offer its best! So far, in several areas, the olives are harvested by the hand, before falling to the ground. In others, the traditional way has been replaced by threshing. If the fruit falls to the ground, a careful selection of those will come to the mill. The welcome of the new crop is the time of reward, the reward of nature to the human care. Therefore, the harvest of olives is a ritual and is part of Cretes history. Harvesting the fruit can be done in the following ways: -By hand. -After normal fall. -By beating the branches and knocking down the fruits. -With machines.
