Omelets are fun to make. Even though the basic egg and cheese is good, I love mine with tons of veggies. Looking around at recipes online I saw that people use some rather unusual ingredients to make omelets. Take a look at these ingredients: Sweet potatoes, snow peas, dried sunflower sprouts, pickled onions, butternut squash, cottage cheese, apples, pears, cranberries, pineapple, figs, smoked salmon, meatballs, fried rice, crushed graham crackers, omusoba noodles, walnuts, pine nuts…now I know you cooks can’t wait to incorporate some of these into your next creative cooking adventure. Up until last year’s research results, eggs had a bad rep. For years doctors have advised patients not to eat eggs but new research says that the benefits of eggs far outweigh any potentially negative effects (including cholesterol issues). Other uses for eggs are out there. One website even recommends putting some crushed eggshells in your coffee before brewing to help take away the bitter taste. [If you’re a coffee purist, hang on, don’t let me lose you.] Another site recommends revitalizing your dry hair shine by whipping a couple of egg yolks, with a touch of olive oil and a few drops of scented oil and leaving it on for 20 min. before washing it out for a fresh look. And, with the whites you have left over you can whisk them with a little water and wash your face -- they claim it’s a moisturizing, anti-aging cleanser! And I found out that if you don’t have a band aid, you can apply a thin layer of egg white which will seal a small cut and aid in healing more quickly. My friend was a missionary in Haiti a long time ago and one of the delicacies that she was welcomed with was rotten duck eggs which had been buried. She had to eat it because it would have been an insult to have declined. She wanted to make a good impression on arrival, so she prayed hard and ate the special gift. We’re a lot like eggs. Some of us are plain and unaccessorized and great! Some of us have plenty of unusual and interesting accessories, like the omelet and are great too! For some of us, just our sweet presence, helps take the bitterness away from people’s rough times. Others of us add the shine to other people’s lives by lifting them up and pointing out their highlights and qualities. Some of us make people feel younger when we’re around—the atmosphere is just different. And there are those of us who are especially used by God to help people heal. However, the person I really want to talk about is the person that people think is rotten, garbage, bad to the core, and no use for anybody – a “hard shell” so to speak. Just like the Haitians saw the rotten duck egg as a delicacy, so God looks at us and sees what other people miss. Incredibly, God sees that person --a special gift to the world -- that other people are missing. If we’ve ever had that feeling that we’re no good to God or anybody else, think again! The biggest bad guys in the Bible were some of the folks that were most greatly used. Paul persecuted and killed Christians, then wrote a huge portion of the New Testament. David had a woman’s husband put on the front lines to be killed so he could have her wife, yet God used him to write the Psalms and he invented more than 500 musical instruments to be used in worship. Rahab was a hooker and she was used to help God’s people take the Promised Land, Jericho. Mary Magdalene had a sordid past but she was one of Jesus’ very own inner circle. Luke Chapter 7 talks about a woman, who had a sinful life, washing Jesus feet with her tears, drying them with her hair and then applying a precious ointment to them--in effect a prophetic act announcing His upcoming death. 2 Timothy 20-22 says “In a large house there are articles not only of gold and silver, but also of wood and clay; some are for special purposes and some for common use. Those who cleanse themselves from the latter will be instruments for special purposes, made holy, useful to the Master and prepared to do any good work.” [That’s talking about us!] Jeremiah 1:5 “Before I formed you in the womb I knew you, before you were born I set you apart….” No matter who we are, God knows us and has set us apart for His plans. He’s inviting each of us to take part in His kingdom: Matthew 25:34 “…Come, you who are blessed by my Father; take your inheritance, the kingdom prepared for you since the creation of the world.” Let’s get crackin’ and open up and let him use us today!
