On Fridays, after a long week, sometimes my grandmother would fry catfish. Other times shed make homemade burgers and fries. She LOVED her hot sauce. Heres my homage to many Friday nights on Chicagos west side with my granny. Its a chorizo burger with sautéed shrimp and chipotle mayo. My grandmother hated mayo. She ALWAYS had sandwich spread. I gag at that to this day. Anyway, I sautéed the shrimp in the fat from the chorizo. Flavor on top of flavor.
