On processing deer (white-tailed deer)... Advice please! Im in Michigan and the days will be around freezing and the nights below freezing during the time of deer harvest season. My family has traditionally hung harvested deer from a tree/ladder/unheated garage rafter for up to two weeks before fully processing (the deer would hang just gutted... not skinned or processed). My fiances family cleans and processes the deer right away. What do you all do and why? Do you hang to season the meat? The deer that my family harvests can be considered swamp bucks (from SE Michigan, swamps and soybeans) while the deer my fiances family harvests come from the corn belt in Mid-Michigan. Please advise! Ben Trommater
