One of my all time favorite veggies is asparagus. Theres so much you can do with it and its extremely flavorful. And what better way than to turn it into a soup? Presenting Asparagus Soup with Lemon-Chive Sour Cream served with Garlic Herbed Ricotta and Pea Crostinis: Vibrant asparagus sautéed with shallots, garlic, peas, and spinach then simmered in water blended till smooth and creamy, served with a dollop of sour cream mixed with chives and lemon juice, and finished with sea salt, black pepper, and olive oil; Served on the side is multi-grain crostinis rubbed with olive oil, Italian seasoning, and grated garlic, grilled till toasted, and garnished with a mixture of whole-milk ricotta cheese, sour cream, red pepper flakes, sea salt, black pepper, grated garlic, Parmesan cheese, and green peas. Healthy, hearty, heart-warming my delicious.
