One of my favorite lunches is what I like to call a Mexican mish-mash. I make shredded chicken in the crockpot (chicken breasts, salsa & taco seasonings cooked on low for ~6 hours), then use this meat for various meals all week long. My mish-mash consists of this shredded chicken, black beans, onions, tomato, avocado, olives, little bit of cheese, salsa & little bit of sour cream. Delicious! (This is even good over a bed of lettuce, but if you use a whole small tomato, 1/4 onion & half avocado you get plenty of servings of veggies.)
