One of my favorite recipes of all time and very healthy, Roasted Root Medley! Im gonna share the recipe with you :) You can serve this with a serving of quinoa which is what I like to do. Its a fan fave in my house! Here goes! Serves 4 1 large organic yam cut into 1-inch chunks 1 bag of organic baby carrots (if they baby carrots are thick cut them in half) 1 large organic beet cut into 1-inch chunks (I buy my beets precooked and add them at the end) 1 large organic yellow onion cut into large wedges Braggs Organic Olive Oil - I usually pour 2 tbsps in and mix with my hands.. add a little more oil til the veggies are lightly covered in oil. OPTIONAL if you like ginger, I add a tbsp of organic chopped ginger to the olive oil before rubbing it all over the veggies :) Toss everything into a bowl to mix together. Spread on a cookie sheet and bake for 40 to 50 minutes until veggies are tender. Turn the veggies once or twice during cooking time.. I turn every 15 minutes to prevent burning and uneven cooking. Add salt if desired! I usually buy my quinoa in the frozen section of whole foods so it heats in the microwave for a few minutes and its ready to eat. I throw the roasted veggies on top! You can also use brown rice or even couscous if you dont have gluten allergies. Millet is another option! Enjoy!!!
