One of the fruits I look forward to eating in summer and early fall is the Cactus Fruit. This video shows how to cut it open, but you should eat it all, do not strain out the seeds. 1- The fruit should be refrigerated before eating. It has a very mild sweet flavor that is enhanced when cold. Warm cactus fruit just does not taste as good. 2- When you buy them make sure there are no soft spots on the fruit. That means it is bruised or over-ripe, and it loses much of is flavor and turns mushy. 3- The seeds are extremely hard, so DO NOT try to crack them with your teeth or try to chew on them. You just need to swallow them whole with the delicious flesh that surrounds all the seeds. Squeeze the fleshy part between tongue and pallate to extract the flavor and the juice. 4- The flavor is unlike any other fruit. 5- The price in the stores in NE can vary from 50 cents to $1.29 each. I also saw some sold for $1.29 per pound. 6- The ones sold in stores have been washed to get rid of the prickles, but there might still be some left on them. If you get them on your hands, you might need a magnifier and a tweezer to remove them. They can be very painful, but worth the effort.
