One of the most popular dishes from Southern Vietnam is the Vietnamese mini savory pancakes (banh khot). Banh khot is the younger sibling of banh xeo (crispy pancakes) and can be serve with vegetables and sweet & sour fish sauce. Banh khot usually served as breakfast or snack after our afternoon nap in Southern Vietnam. The batter of banh khot is made out of coconut milk, rice flour and turmeric powder. To save time, you can buy the bag of banh khot flour at Asian markets. Banh khot toppings are ground pork, shrimps, mung bean and top with dried shrimp powder. You also need the mini cake mold, which can be found in most Asian supermarkets. Banh khot is a popular street food and unique Vietnamese cuisine. And certainly brought a lot of childhood memories to many people, including myself.
