One thing that I use when working to make species that are human-like but not truly human is my interest in Paleoanthropology. The wide array of extinct human species out there is perfectly suited to make creatures like humans yet not really human enough to raise serious Uncanny Valley issues for any human that sees them. Not to mention that extinct humans (or for that matter species more or less apes in all but names) tend to be more rarely used than one might think as physical models for species in science fiction scenarios. Its a way to do the general spirit of the Rubber Forehead alien without sacrificing the truly alien aspect of the beings in question. Homo neanderthalensis would be the classic example, but the sheer size of Homo heidelbergensis or the Sasquatch-esque appearance of Paranthropus aethopicus also have potential.
