Orange-Ginger Dressing - slightly adapted from the recipe by Kristina Carrillo-Bucaram 2 Cups OJ 1/4 – 1/3 Cup natural Peanut Butter (depending on how thick you want it) 1/4 cup raw, shelled Pistachios 1 Med-Large green Onion Small thumb Ginger* Small thumb Turmeric* 1 Tbs. fresh Rosemary* 1 Tbs. fresh Sage* Optional: Juice one Lime * Fresh is always best, but you can use dried if fresh isnt available. Blend till smooth This is great on any salad - but its fantastic on Pad Thai-type salads. Ideally, dressing shouldnt be just something that you wet your plants with to get them down your throat easier. It should be health food in-and-of-itself and you should want to eat it with a spoon and be able to without feeling guilty.
