Orecchiette with broccoli rabe, Italian sausage, and sun-dried tomatoes 1 lb orecchiette pasta, cooked per instructions, sacing 1/2c of pasta water 4oz sun-dried tomatoes, plus 1tbl oil from jar 1 lb Italian sausage, torn into small pieces 1 clove garlic Pinch of red pepper flakes, to preference 1 tbl olive oil 2 bunches of broccoli rabe or broccolini Shredded parmesan, pecorino or asiago (or all three) Pre-cook the broccoli. Heat a large pot of water to a boil. Set aside a large bowl filled with ice water. Place broccoli rabe in boiling water for 3 minutes. Strain. Immediately transfer broccoli to ice bath to stop cooking process. In a large saucepan, heat 1 tbl olive oil over med heat. Add sausage and garlic and cook until sausage is no longer pink. Cut up sun-dried tomatoes and place in pan with sausage. Add 1 tbl of oil from the sun-dried tomato jar. After broccoli rabe has cooled slightly, cut broccoli rabe into 1-2” pieces and place in pan with sausage mixture. Heat through. Deglaze pan with pasta water. Add pasta and stir to coat pasta with “sauce”. Serve immediately and top with generous amounts of grated cheese. I love how authentic Italian this dish is and how easy it is to make!
